Okies so today for dinner i made jacket potato with tuna and sweetcorn and cabbage fillings…
and for dessert man, melon and herb smoothie.

Jacket potato:
Preparation time 45-60mins

Ingredients:
1 baking potato, cabbage, tinned tuna, tinned sweetcorn and mayonnaise.

Preheat the oven at 250 degrees 10mins before..
Wash your potato properly and get a large cooking foil and wrap it around your potatoes… then place it in the oven…
It usually takes between 45-60mins for the potato to be done so after 45 mins keep an eye on it and poke it with a fork to see if the inside is nice and softly cooked…

For people that do not like cabbage like myself… this is the only tastiest way of eating cabbage and believe me once you try this then you will know…
So take that cabbage it can be any color red or green/white and cut a quarter of it… with a knife shred into it and try to shred it as thin as possible the thinner the better… any big chunks throw it away unless you want to eat it raw…
Then place it in a sieve and wash it thoroughly sprinkle some salt on top and mix the salt into it then leave it to drain…

Now open your tuna and sweetcorn tins and place its contents in a bowl… if your tuna is tuna chunks then with a fork flake it out and mix it with the sweetcorn…
Then get your mayo and scoop two spoonfuls into the bowl and start mixing the mayo into the tuna and sweetcorn mix…
Season with lots of black pepper then mix it again and leave it in the fridge until your potato is cooked…

Okies now back to the cabbage…
Grab a handful of the cabbage into your fist and squeeze it really tight and hard trying as hard as you can to get all the water out of it…
Carry on doing this to the whole contents of your cabbage until you feel your cabbage becoming a lot softer and the crispiness of it is gone…
Then place it in a bowl and add 2 spoonfuls of mayo in it and mix the mayo into it…

Now dress your serving plate with the cabbage and i also had some salad left over from last night (for recipe check the lemon and basil sea bass thread) so i have also dressed it with some of that salad.

So now check on your potato and once it is done take it out unwrap the foil around it and with a knife cut a cross on top of it…
Open that cross up so that you have the potato still intact at the bottom but opened up on top… Then place your potato on your serving plate…

Now simply fill the inside of your potato with your tuna and sweetcorn mayo mix and TA DAAAA!!! Bone Appetite..

i love jacket potatoes hafsa, and well ur recipe nice minus the tuna im pure vegetarian
